St. Patrick's chocolate truffles

These St Pat's inspired chocolate truffles are sure to make your loved ones smile in delight, and the best part is they are so good that you can make them anytime of the year. No one can guess that there is spinach in the cake, so don't tell your guests or kids your secret ingredient until at least they try it. Enjoy!

Ingredients:

Spinach cake:
3 eggs
1 tsp vanilla
1 1/2 cups of sugar
1- 6oz or 8oz bag of (big leaf) spinach, you need 1 cup puree (use fresh not frozen)
3/4 cup of olive oil
2 tbsp lemon juice
2 cups flour
3 tsp baking powder
1/2 tsp salt

Whipped Cream Cheese Mousse: 
1 (8 ounce) package cream cheese
1 cup powder sugar (or more as needed)
1/8 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups heavy whipping cream

1 (3 ounce) bar(or more as needed) chocolate flavored confectioners coating (or any chocolate you prefer)

Directions:
Remove stems from spinach. Puree spinach in food processor until it's liquid, takes a few minutes so be patient.
Beat eggs and sugar till light and creamy. Add oil, lemon juice and 1 cup pureed spinach mix well.
In a separate bowl sift flour, baking powder, and salt add and blend into spinach mixture for 1 min till well blended. Pour into greased 3L (13×9 inch) Pyrex glass pan.
Bake at 350 for about 30 min or until done (check with toothpick if it comes out clean, then it's done). Let cool completely.

Then make the cream cheese mousse:
In a small bowl beat whipping cream until stiff peaks form; set aside. In a large bowl combine cream cheese, sugar, salt and vanilla. Beat until smooth, then fold in whipped cream.               

How to assemble everything together:
  1. Crumble the cake into a large bowl, and stir in the mousse until well blended.               
  2. Refrigerate the mixture for at least 3 hours or overnight. Once they are firm, you can:
  3. Melt chocolate coating in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.                
  4. Use a melon baller, small scoop, or your hands to form balls of the spinach cake mixture. Dip the balls in chocolate using a toothpick or fork to hold them. Place on waxed paper to set.               
  5. Decorate with green sprinkles or any other decorations of your choosing.
  6. Place in refrigerator to set.
  7. Enjoy!!!
